Haji Shir Agha has more than 20 years of experience selling bulanis, which started from selling delicious bulanis in Patnos and reached this fame. Bolanis are prepared from dough, potatoes, salt and sometimes pepper. Making bulani starts from washing potatoes to boiling, peeling, kneading, charring the dough and finally frying it. We also saw Haji Shira Agha's buttermilk shop, where there was a big clay pot called Mati, which was full of buttermilk, on his table. The ice butter that refreshes one's throat in this heat, and with the lemon wedges that are inside and gets under the teeth while eating, doubles its taste. With the sound of Bitabi's call to prayer, Meh is relieved to eat bulani, the heat of which makes Meh eager to eat it, and I can't describe its taste to you. The ingredients for Bolani are: Dough, Potatoes, salt and sometimes chilies. The process of cooking Bolani starts from washing the potato, boiling it, peeling it, scrambling it and ends with filling it in the prepared dough and frying. Additionally, we saw Haji Sher Agha's Dogh selling point where he had a big jar filled with chilled dogh called Mati on the front desk. In this warm weather, the chilled Dogh refreshes your dry throat and the cucumber pulp doubles its taste.
