Do you know super fluffy cardinal slices without jam, but with espresso in the cream? So delicious! Grandma Traudi shows you how easy it is! INGREDIENTS Meringue or meringue mixture: 8 egg whites 180 g granulated sugar Sponge mixture: 8 egg yolks 1 egg 80 g granulated sugar 1 packet of vanilla sugar 80 g plain wheat flour Filling: 250 g whipped cream 1 cup of espresso 2 tbsp granulated sugar (30-40 g) PREPARATION Allow a cup of espresso (coffee machine) to cool Mix 80 g granulated sugar with vanilla sugar Separate the eggs into yolks and whites Meringue mixture: Beat the egg whites in the food processor until stiff, slowly adding 180 g granulated sugar. Sponge mixture: Beat the yolks, egg and the granulated sugar-vanilla sugar mixture in a second bowl until fluffy. Carefully fold the sifted flour into the sponge mixture. Preheat the oven to 160 degrees OH and UH. Grease a baking tray and line it with baking paper. Pour the snow mixture into a large piping bag and pipe 6 strips onto the baking paper. Pipe the remaining snow mixture on top. Fill a second piping bag with sponge cake mixture and pipe this between the meringue mixture. Place the baking tray with the mixture in the oven and bake at 160 degrees OH and UH for 15 minutes. Whip the cream until stiff, refine with cold espresso and 2 tablespoons of granulated sugar. Remove the mixture from the oven and turn it out onto baking paper sprinkled with granulated sugar. Place a damp cloth over the top and peel off the baking paper, divide the mixture and leave to cool. Spread the espresso cream on half the cardinal slice and place the second half on top.
