Ingredients: 800 g beef topside, 4 eggs, juice of half a lemon, 400 g stale bread, nutmeg, 60 g grated cheese, 2 l seed oil, 2 lemons, 500 g puntarelle, 10 anchovy fillets, 1 clove of garlic, 2 lemons, wine vinegar, ice, extra virgin olive oil, 2 ciriole, 200 g shredded burrata, 10 anchovy fillets, 1 bunch of radishes Procedure: For the breading, mix part of the breadcrumbs with the grated cheese and a sprinkling of nutmeg. Beat the eggs with salt and juice of half a lemon. Take the beef slices and pass them through the simple breadcrumbs, the beaten eggs and, finally, the rich breading (with grated cheese). Fry in very hot oil until golden brown, turning them. For the side dish, clean the puntarelle and shred them. In the blender jug, blend the anchovies with a little white vinegar, garlic if desired and the lemon juice, until you get a smooth cream. Continue blending, adding an ice cube and the oil in a drizzle: you will get a sort of mayonnaise. Pour the sauce over the puntarelle just before serving and mix. With these ingredients, we can fill a sandwich: cut the bread in half and fill it with the burrata, the fried slice and the seasoned puntarelle.
