We bake pizza of the Poolish and Biga variety. The oven we use is a pizza oven from the brand Macte ovens and the model is called voyager - you get up to 500c and can use it indoors on a regular 220v outlet. Leaven for 16 hours at room temperature (21 degrees) Refresh: Poolishen 250g flour 100g water 0.3g yeast 25g salt Process in a mixer until the dough is smooth and strong. Ball after about 30 min. Bake out after about 4 hours. Biga recipe: 500g flour 250g water 1-1.5g yeast Mix to a rough consistency, cover and leaven for approx. 18h at 16-18 degree temp, alternatively 4h at room temp and 18h in the fridge. Refresh: Bigan 100g water 13g salt 5g malt. Run everything in the mixer until the dough is smooth and strong. Ball after about 30 min.
