Ghugni chaat - • High Protein Ghugni Chaat Matar Ghugni... *********************** ALOO TIKKI CHAAT Preparation time 10 minutes Cooking time 20-25 minutes Serve 2-4 For Aloo Tikki Mixture no. large Frying potatoes (peeled & grated) mountain potatoes 1 no. large boiled Frying potato (peeled & grated) Boiled Pahari Potato 1 tbsp Oil, Oil Salt to taste, Salt to taste 2-3 heaped tbsp Cornstarch, Cornstarch 1 tbsp Oil, Oil For Aam Ka Murabba 2 tbsp Oil, Oil 1 tsp Cumin seeds , Cumin 2 no. dry Kashmiri red chillies, dry Kashmiri red chillies 5-6 no. Raw mangoes (peeled & chopped) Raw mangoes 1⁄2 cup Water, water 2 cups Jaggery, jaggery Salt to taste, salt to taste 2 heaped tbsp Degi red chili powder, Degi red chili powder Prepared asafoetida water, asparagus water For Asafoetida Water 1 tbsp Oil , oil 1⁄4 tsp Asafoetida, asparagus 1⁄2 cup Water, Pani For Frying 2-3 heaped tbsp Ghee, Ghee 1-2 tbsp Oil, Oil For Masala 1 heaped tbsp Black peppercorns, Peppercorns 1 tbsp Coriander seeds, Coriander seeds 1⁄2 tbsp Fennel seeds, Fennel 1⁄2 tbsp Cumin seeds, cumin Salt to taste, salt to taste For Sweetened Curd 2 cups Curd, beaten, Curd 1 heaped tbsp Powdered sugar, Ground sugar For Assembling Prepared Aloo tikki, Prepared Aloo tikki Prepared sweetened curd, Prepared sweet curd Prepared Masala, Prepared masala Prepared aam ka murabba, Prepared mango jam Pomegranate pearls, Pomegranate Seeds For Garnish Coriander sprig, Coriander Leaf Process For Aloo Tikki Mixture ● In a bowl, add grated frying potatoes, boiled frying potato, oil, salt to taste, cornstarch and give it a good mix. ● Finish with oil, cover with cling wrap and set aside for further use. For Aam Ka Murabba ● In a handi or sauce pot, add oil, once it's hot, add cumin seeds, dry red chillies and let it splutter. ● Add raw mangoes, water, jaggery, salt to taste, degi red chilli powder and mix well. ● Cook it for 10-12 minutes on medium flame until mushy. ● Add the prepared asafoetida water and give it a good mix. ● Transfer to a bowl and set aside to cool down to room temperature. ● Serve with prepared aloe tikki. For Asafoetida Water ● In a pan, add oil, once it's hot, add asafoetida and saute for a minute. ● Add water, get to a quick boil and set aside for further use. For Frying ● Take the aloo tikki mixture, divide into medium lemon size balls and keep it aside. ● In a pan, add ghee, oil, once it's hot, add tikkis and shallow fry it until crispy and golden in color. ● Transfer it to an absorbent paper and set aside for further use. For Masala ● In a pan, add black peppercorns, coriander seeds, fennel seeds, cumin seeds, salt to taste and dry roast it for a while until aromatic. ● Transfer it to a mortar pestle and grind it into a coarse powder. ● Keep it aside for further use. For Sweetened Curd ● In a bowl, add curd, powdered sugar, whisk well and set aside for further use.
