Just as a microorganism can infect us and even kill us, there are many others that can protect us and provide great benefits. Among these beneficial microorganisms are yeasts, which belong to the fungi kingdom, which despite the fact that we have used them for more than 5,000 years in the production of bread, beer and wine, today we know that they have many more uses ranging from animal and plant health to the production of biofuels.
