This is definitely the tastiest perfect ball we've ever made. But the challenge wasn't just making the ball, no. We decided to prepare the chocolate from scratch, using the cocoa bean. The recipe is quite laborious: you have to ferment the cocoa seed, then roast it to remove the nibs – which are the kernels of the seed and what makes chocolate. Then you have to beat all of this with cocoa butter, sugar and powdered milk until it has a very creamy consistency. In the end, the ball turned out very beautiful… and very delicious!
