Recipe: Walnut ice cream Makes just under 1 liter Preparation time: 45 minutes Ingredients: 50 g sugar 50 g roughly chopped walnuts 80 g maple syrup 125 g walnuts 100 g sweet cream 400 ml milk 1 vanilla pod 3 eggs, 3 egg yolks 40 g sugar 20 g nougat 20 ml cognac Preparation: For the brittle, caramelize the sugar in a saucepan. Stir in the chopped walnuts. Place the brittle on a baking tray lined with baking paper and allow to cool. For the ice cream, heat the maple syrup in a saucepan, roughly chop the walnuts, add them and allow to roast a little. Add the cream, milk, scraped vanilla pulp and the pod and bring everything to the boil. Meanwhile, beat the eggs, egg yolks and sugar in a metal bowl in a hot water bath until white and foamy. Pour the walnut cream milk on top while stirring constantly and add the nougat and cognac. Mix everything well and leave to cool. Freeze the mixture in the ice cream maker. Finely chop the brittle and fold it into the almost frozen ice cream mixture and serve. Bon Appetit ;-)
