THANK YOU VERY MUCH!! ???? __________________________________________ INGREDIENTS OF THE PERFECT SPONGE CAKE RECIPE FOR FONDANT CAKES 300 gr of Butter 600 gr of Sugar 1 teaspoon of Vanilla paste (mine is from HOME CHEF) 6 eggs 490 gr of Flour (common flour) 15 gr of yeast (mine is royal) 5 gr of bicarbonate 1.5 gr of salt 375 ml of milk You can see this recipe with its step by step on my blog https://www.chefdemicasa.com/bizcocho... MY TRICKS FOR A PERFECT SPONGE CAKE Sift the flour very well together with the yeast or baking powder, bicarbonate, salt .... this will make it distribute better in the dough and your cake will rise more evenly in the oven. Always have all the ingredients at room temperature, (butter, eggs, milk, oil, etc ....) those indicated in your recipe. If you forgot to take out the butter, put it in the microwave for a few seconds. Or if you forgot the eggs, soak them in warm water for 10 minutes. Do not over-beat the cake batter once the flour has been added, this will prevent gluten from developing and your cake will be fluffier. Line your moulds with spray or butter. And to ensure a good release, put paper on the base of your moulds. THE OVEN: First of all, you need to know your oven, and if not, I recommend that you use a special oven thermometer, they are inexpensive and will help you to know the exact temperature. Preheat it to 180º and when you put the cake in, lower the temperature to 175º. The time will depend on the size of your mold..... MOULD UP TO 12.5 CM.....20 min 15 CM MOULD................40 min 20 CM MOULD................1 Hour 25 CM MOULD................1 Hour and 20 min 30 CM MOULD................1 Hour and 30 min Never open the oven door until at least the first 25 minutes have passed. To know if it is baked, prick it with a needle and if it comes out clean it will be ready!!!
