Recipe for Thermomix® TM6, TM5, TM31: For the yeast dough: 500 g flour 1/2 cube of yeast 100 g sugar 2 tsp vanilla sugar 1 pinch of salt 1 egg 250 g whole milk 100 g soft butter For the topping: 150 g soft butter 100 g sugar 2 tsp vanilla sugar 2 tbsp blossom honey 3 tbsp cream 150 g flaked almonds For the filling: 5 sheets of gelatine 1 packet of vanilla pudding powder 100 g sugar 500 g whole milk 800 g cream 4 packets of cream stiffener (you can use 4 sheets of gelatine here as an alternative) For the yeast dough: Put 250 g whole milk, 20 g yeast and 1 pinch of sugar into the mixing bowl. 3 minutes / 37°C / level 2 Sift 500 g wheat flour type 405 into the mixing bowl. Add 100 g sugar, 2 tsp vanilla sugar, 1 pinch of salt, 1 beaten egg and 100 g soft butter in pieces. 3 minutes / dough setting. Leave to rest covered for 60 minutes, rinse the mixing bowl. While this resting time is running, continue preparing the topping. For the topping: put 150 g butter, 100 g sugar, 2 tsp vanilla sugar and 2 tbsp blossom honey into the mixing bowl. 3 minutes / 60°C / setting 2. Add 3 tbsp cream. 5 seconds / setting 6 - push everything down with the spatula. Add 150 g flaked almonds to the mixture. 8 seconds / reverse - setting 1 - transfer and allow to cool. Rinse the mixing bowl again. Fold the yeast dough several times on the floured work surface. Roll out the dough on a prepared baking tray, prick it several times with a fork and spread the almond mixture on top. Cover and leave to rise for 30 minutes. Preheat the oven to 180°C top/bottom heat. Bake for 25 minutes on the 2nd rack from the bottom until golden brown. For the filling: put 500 g milk, 100 g sugar and 1 packet of vanilla pudding powder in the mixing bowl. 6.5 minutes / 100°C / level 3 or 100°C thickening function During this time, soak 5 sheets of gelatine in cold water. Allow the finished pudding to heat up on level 2 and add the squeezed gelatine until it has dissolved (approx. 30 seconds). Transfer to a container and place cling film directly on the pudding so that it does not form a skin and allow to cool completely. Allow the finished bee sting plate to cool completely as well. Cut off the edges of the bee sting plate. Cut the plate 4 times vertically and 4 times horizontally to create 16 rectangles. Cut these rectangles once in the middle and place the bottoms on a baking tray. Pay attention to the order so that you don't get the "lids" mixed up. Beat the cream with a pinch of sugar and 4 packets of cream stiffener until stiff. Add the cold pudding and stir on a low setting until it is nice and creamy. Place a baking frame around the pastry plate, spread the cream pudding on top, smooth it out and place the bee sting lids on top. Chill for 3 hours. Do not put them in the fridge and do not cover them, otherwise the almonds will become soft. Tip 1: They taste even better the next day. Tip 2: They can be frozen individually, ideally with baking paper between the pieces. Simply thaw at room temperature.
