Sergio has a free-range chicken farm in the province of Salamanca for the production of eggs, chickens that are raised freely with access to outdoor patios. A very different way of raising chickens for meat, such as that which Javier does in the province of León. The ducks at the Selectos de Castilla farm in the province of Palencia are raised in a similar way during their first weeks of life, because they then complete their growth process outdoors until the time of the final fattening to grease their liver, the most precious part of the animal. In Pedrosillo el Ralo, also in the province of Salamanca, Miguel Ángel raises native breeds of chickens, Castilian and Asturian black chickens, and Toulouse and Andalusian geese.
