DRINK IN MODERATION Pork Ribs Yield: 6 servings Preparation time: 4 to 5 hours Ingredients For the pork ribs: 1.5 kg of pork ribs 1 tablespoon of fleur de sel 1 teaspoon of Calabrian pepper 3 cloves of garlic 2 bay leaves 3 sprigs of fresh thyme 1 tablespoon of smoked paprika 2 tablespoons of olive oil 300 ml of beer 3 onions For the side dish: ½ head of red cabbage 1 clove of garlic salt to taste freshly ground black pepper to taste olive oil to taste honey to taste ¼ of a squash 100 ml of beer Preparation Pork Ribs: Peel and grate or cut the garlic cloves into thin slices. In a bowl or mortar, place the olive oil, fleur de sel, paprika, Calabrian pepper and garlic. Mix everything together and add the bay leaf and thyme. With clean hands or wearing gloves, rub the seasoning all over the ribs. Place the seasoned ribs on a baking tray, cover with aluminum foil and refrigerate for at least 2 hours, ideally overnight. Peel and slice the onions. Spread the onions on a baking sheet, remove the ribs from the refrigerator and place them on top of the onions with the bone facing down. If any water has been released while the ribs were in the refrigerator, pour it over the meat. Pour the beer over the meat and onions, cover with aluminum foil and roast at 170˚C for approximately 1 hour and a half or until the meat is tender and falling apart. Side dish: Peel and grate or chop the garlic clove. Cut the cabbage into 4 wedges. Place each wedge on a sheet of aluminum foil and season with grated garlic, salt, freshly ground black pepper, a drizzle of olive oil and a little honey. Wrap each cabbage wedge in the aluminum foil and place on a baking sheet. Set aside. Cut the pumpkin into wedges and place on another baking sheet with the skin and seeds. Season with salt and olive oil, drizzle with beer and cover with aluminum foil. Bake the cabbage and pumpkin for 1 hour at 170˚ C. Remove the cabbage from the oven. Set aside. Remove the aluminum foil from the pumpkin and bake for another 10 minutes to caramelize.
