Mix the water and flour for the cooked piece together until smooth, heat while stirring until it has the consistency of a pudding, allow to cool completely 2. Mix the pre-dough ingredients into a homogeneous mass, leave to mature at room temperature for 60 minutes 3. Knead the main dough ingredients with the flour cooked piece and pre-dough vigorously for 10 minutes to form an elastic dough, leave to mature for 60-90 minutes until it has doubled in size 4. Spread out the dough, roll it up, divide it into four parts and place each one in a loaf tin (34x14x12) twisting each one by 90°, leave to mature for 60 minutes until the dough has reached the top edge of the tin 5.
