English: Twitter: / teleantioquia Instagram: / teleantioquia Website: http://www.teleantioquia.co/ *** SPRING ROLLS Ingredients 300 g finely chopped chicken 12 sheets of rice paper 1 beaten egg 150 g chopped cabbage 150 g bean sprouts 50 g grated carrot 15 g chopped scallions or green onions 6 sprigs of cilantro 2 cloves of garlic or 1 tsp garlic paste 1 tbsp soy sauce 1 tsp sugar 1-2 tsp salt 1-4 tsp white pepper Vegetable oil For the sauce: 2 tbsp paprika paste 2 tbsp rice vinegar 2 tbsp sugar 1-2 tsp salt Preparation: 1. In a mortar, process the garlic with the cilantro and pepper. 2. Heat a frying pan and sauté the mixture in 1 tbsp of oil. When it starts to smell, add the chicken 3. Stir constantly so that the mixture does not clump together 4. When the chicken has changed color, raise the heat to high and add the cabbage 5. Mix and add the sprouts, carrot, soy sauce and season with salt and sugar. 6. Let it cook for a minute and turn off the heat 7. Add the spring onion and let it cool 8. Meanwhile, prepare the sauce by reducing the vinegar and sugar over the heat, add the salt and finally the paprika paste, let it cool 9. Heat the oil over medium heat and assemble the rolls 10. Spread out the rice paper 11. Place 2 tbsp of chicken and vegetable filling on one end 12. Roll up halfway, fold the edges and continue rolling 13. To join the ends, brush with beaten egg 14.
