Fry the onions in it for around 10 minutes until translucent and leave to cool. Season the roulade meat with seasoning salt, pepper mix and seasoning. Spread mustard on the bottom two thirds of the roulades. Place 2 slices of bacon on each. Top 2 roulades with 2 cucumbers, 2 roulades with 1 carrot and celery strip each and 1 cucumber, distribute the onion strips on top. Fold the meat slightly over the filling on the side, then roll each up tightly from the bottom. Secure the roulades with toothpicks or tie them together with kitchen string. Season the outside of the roulades with seasoning salt and pepper mix. Heat 1 tbsp of cooking oil in a pan. Fry the roulades vigorously all over in it. Remove the roulades. Fry the onion, carrot and celery cubes in the frying juices with 2 tbsp of cooking oil, turning them over, for around 5 minutes. Season with seasoning salt and pepper mix. Add tomato paste and fry for around 2 minutes, stirring. Sprinkle flour over the top and fry for around 1/2 minute. Deglaze with wine and let the pan juices boil. Place the roulades on top and press them in gently. Pour in the hot stock. Cover the roulades and braise for around 2 hours. Lift the roulades out of the braising liquid. Pour the braising liquid into a fine sieve over a pan and press it through with a ladle. Bring the sauce to the boil again. Add 1 tbsp butter and melt it in it while stirring. Serve the roulades and sauce.
