Maroukla Nikolaki was for many decades the beloved wife of Mr. George Lionta-Nikolaki. An active woman, previously mixed with the social and cultural events of Kasos, supporting her husband in the work with the animals and the cheese-making. Since Mr. George passed away, Maroukla decided to continue doing what he loved. So he makes sitaka, this amazing dairy product that complements and adorns a plate of spaghetti, a Kasiotiki roll, a slice of bread and honey, even a... pizza! While waiting and filming the painstaking way of producing shitaka, I discussed with her a bunch of other topics and as Maroukla is not afraid to say figs figs and scafi scafi, truths came out of her mouth that are very difficult to say...
