Recipe: Wash 500g sushi rice. Cook in a rice cooker with 550ml water. Sushi stock: Boil 250ml Mizkan rice vinegar, 200g brown sugar, 37g sea salt. Chinese cucumber salad: Dice 1/2 cucumber and mix with 1 tbsp crushed chilli shrimp flavour, a little sea salt and 1 tbsp sesame oil. Refine with a dash of hot Maggi. Red cabbage salad: Pour equal parts salt and sugar over the red cabbage and season with a little rice vinegar. Salmon: Make a sauce from mayonnaise, Sriracha mayo, a little soy sauce and togarashi. Tuna: Sesame oil, light soy sauce, sweet soy sauce, red onions, roasted sesame seeds. Depending on the desired level of spiciness, fresh chillies and spring onions can be added.
