Not only is the filling of these empanadas delicious, since we are making it with fresh fruit, but the dough we use is easy to make, with few ingredients, and leaves a soft yet crispy texture. Here is the recipe below: For the dough: ????3 cups flour (480 grams) ????2 sticks butter (226 grams) ????1 cup evaporated milk or sweet cream (250 ml) For the filling: ????1 fresh pineapple ????½ cup sugar ???? 1 cup water ???? 1 pinch of salt ????1 teaspoon vanilla extract ????2 tablespoons cornstarch +4 tablespoons water ???? 1 egg for varnishing Procedure: 1️⃣Add the flour to a large bowl and mix with the butter at room temperature, mix with your hands until you get a sandy dough. Add the evaporated milk and continue stirring until everything is very well incorporated. Refrigerate the dough for 30 minutes, meanwhile prepare the filling. 2️⃣ Cut the pineapple into small pieces or preferably, place it in a large pot, add the sugar, water, salt and vanilla extract and cook for 10-15 minutes or until the mixture has thickened, add the cornstarch dissolved in the water and cook for 2-3 minutes until the mixture thickens. Let cool completely before assembling the empanadas. 3️⃣On a clean, dry table, place a little flour and stretch the dough, when it has reached a thickness of 1 centimeter, cut circles with a cutter and fill the empanadas, making sure that you put enough quantity, but not too much to be able to close the empanadas. 4️⃣Beat the egg and place it with a kitchen brush on top of the empanadas. Place the empanadas in the freezer for 10-15 minutes. 5️⃣Bake for 30-34 minutes at 350°F or 175°C or until the edges of the empanada are golden brown.
