Sift the white flour and collect it in a bowl. Did you know that… SIEVE THE FLOUR is an important trick to aerate it, or to oxygenate it: by incorporating air into it, the dough will be lighter and softer because the greater quantity of air trapped in the flour will allow for better absorption of water, consequently the gluten will form more easily. Furthermore, this simple procedure will allow us to obtain a dough free of lumps. The presence of VINEGAR OR WINE helps reduce the total pH: this trick facilitates the development of gluten and the dough will roll out more easily because it will be more elastic. Pasta matta is also called “PASTA MORTA” due to the absence of yeast: in fact, this pastry does not rise during cooking! 2. Dissolve the salt in a little warm water: this trick is useful to prevent the dough from having white spots on the surface. 3. Pour the extra virgin olive oil, wine (or vinegar), salt and water into the center of the flour and knead the ingredients, gradually adding the remaining water. 4. Once the right consistency is obtained, wrap the dough in cling film and leave to rest for at least half an hour. 5. Finally, roll out the dough with a rolling pin: it is recommended to roll out the dough to a very thin, almost transparent thickness.
