Ingredients for 4 people 250 g of dried beans, 1 celery carrots and onions Bay leaves and rosemary Garlic chili pepper Extra virgin olive oil Parmesan cheese to taste Tomato puree a glass Pasta of your choice 250 g The day before, soak the beans, Borlotti or Cannellini, covered with plenty of cold water. Also add a scant teaspoon of bicarbonate of soda which will make them tender, optional. They must soak for 24 hours, more or less. The next day, drain the beans, wash them and put them in a large pot covered with plenty of cold water, with half an onion, a piece of celery and a carrot, 2 bay leaves. And boil for an hour, low heat, light boil and use a lid. When the beans are cooked, remove the vegetables and the bay leaf and start preparing the pasta and beans. In a pot, add 2 turns of extra virgin olive oil, 2 crushed garlic cloves and chili pepper to taste. Brown and add the beans with their water, not all the water immediately, keep a little aside to use as needed. Add a glass of pureed tomato sauce, salt and pepper. Bring to the boil and cook for 15 minutes. Add the pasta that will have to cook absorbing the sauce from the beans. If it dries out too much, add the water from the beans. Finish cooking, add a little chopped rosemary, taste for salt and remove from the stove. Add some parmesan to taste and mix. The pasta and beans in this recipe should be quite dry, but if you like it soupy, add a little water.
