Beat the basil to bring out the aromas and add large leaves to the pan with the tomato sauce. 6.Salt the pasta water and pour in the pasta of your choice 7.Place paper towels on a flat surface and dry the eggplant 8.Fry the eggplant in plenty of oil in a hot pan and fry until they get a nice surface. 9. Fold in the ricotta and season with salt and pepper 10. Pour over the pasta in the tomato sauce and also the aubergine when it is finished frying 11.
