RECIPE: For 4 people Ingredients: 2 medium onions finely diced 2 cloves garlic minced with salt 80 g black olives sliced into rings 40 g chopped capers 20 g chopped anchovies 1 chilli chopped with or without seeds 1 can of pelati tomatoes (approx. 400ml) oregano, thyme 500 g spaghetti (cooking pasta al dente: • PASCAL AT HOME! How to cook pasta... ) salt, pepper a bit of freshly grated parmesan Put the garlic and onion in the heated fat and fry for approx. 2 - 3 minutes. Add the olives, capers, chilli, anchovies and tomatoes to the glazed onion and garlic. Fry everything for a few minutes until the tomatoes soften and fall apart. Add the herbs. Reduce the heat and leave the sauce to bubble for another 5 minutes. Add a little of the pasta cooking water to the cooked sauce, then add the al dente pasta. Sprinkle with parsley or basil. You can sprinkle the dish with freshly grated parmesan. Buon appetito!
