HERE IS THE COMPLETE RECIPE ➜ https://blog.giallozafferano.it/cucin... ➜INGREDIENTS; Ingredients for the violata pasta; •250 g re-milled semolina •35 g lard •5 g salt •125 g water •2 teaspoons sugar For the filling; •400 g sheep's ricotta •200 g sugar •3 eggs •300 g flour •Zest of 1 orange •Zest of 1 lemon •1 sachet of vanilla •1 sachet of saffron •1 sachet of baking powder •1 small glass of orange liqueur •For the icing; •Quantity of icing sugar •Lemon juice •Orange liqueur The first thing to make is the violata pasta. In a bowl pour all the ingredients and mix them very quickly until they form a ball that we will let rest covered with film. In the meantime, prepare the filling. In a bowl, work with the electric whisk the sugar with the ricotta and the orange and lemon zest. Add the eggs one at a time and continue to work. Then add the sifted flour with the yeast and vanilla. Finally, add the liqueur and saffron. Roll out the violata dough on a sheet of baking paper and line the 26 cm diameter mold. Pour the filling, remove the excess dough and cook for 50 minutes at 180º. Static oven. In the meantime, prepare the icing by simply mixing a few teaspoons of icing sugar with lemon juice and orange liqueur.
