Finely chop the onions, bell pepper, chili pepper and garlic. Chop the tomatoes into medium-sized pieces. Remove the pits from the olives and cut them in half. Heat a deep frying pan over high heat, add the oil and add the sliced sausages. Cover and cook until golden brown, checking occasionally and stirring to brown evenly. Transfer the sausage to a plate and set aside. In the same frying pan, now over medium-low heat, add a little more oil and add the onion, bell pepper, bay leaves and garlic.
