Mix well. Bring to a boil over medium heat until the sugar dissolves completely and we have a kind of coffee syrup, set aside. 🤎 Beat the 3 yolks until they foam and lighten a little. 🤎Pour the coffee syrup that we had prepared previously into the bowl with the yolks, little by little and without stopping beating. Continue beating until the mixture cools. 🤎Add the 360 grams of butter at room temperature and beat for 5-10 minutes, until the mixture lightens and is very creamy. 🤎Mix 240 grams of whole milk with 5 grams of instant coffee, set aside. 🤎We dip the cookies in the coffee with milk prepared in the previous step, and we place them on the tray or plate on which we are going to present the cake. We place 8 cookies per layer. 🤎Spread a thin layer of butter cream and coffee. We dip 8 cookies again, and again, we place them on the cream and cover them again with the butter cream. And so on until we finish with the 40 cookies. 🤎We cover the sides of the cake with the cream. 🤎We cover the top of the cake with the cream and decorate it to taste. 🤎In my case, I decorated it with caramelized hazelnuts, and with a pastry bag and a Wilton 1 M nozzle, I made some pretty ruffles. I crowned the corners with cereal balls dipped in dark chocolate. 🤎 We put the cake in the fridge for about 4 hours, preferably until the next day.
