Hello everyone, today I will show you how to make pasta with beans and mussels, just like in a restaurant. Ingredients: we need 140 grams of half paccheri, half a kg of cleaned mussels, 100g of cherry tomatoes, 300g of pre-cooked cannellini beans, a sprig of parsley, 1 clove of garlic, salt, oil and pepper. Let's start by putting the mussels in a hot pan and cover with a lid, after 5 minutes the mussels will have opened and we should remove them from the pan. Let's take a strainer with narrow holes and filter the liquid from the mussels. In a pan we put a drizzle of olive oil and start frying the garlic and parsley. As soon as the garlic turns golden we can add the cherry tomatoes, crush them with a fork and make them become a sauce. Now add the mussels with their liquid. In the meantime, let's add the pasta and cook it for the time written on the package. Add the beans and with a fork mash almost half of them, also remove half of the peels, turn off the heat when you get a similar result. Now drain the pasta into the pan also dropping a little cooking water into the sauce, let everything mix. Sauté the pasta for a few minutes, if it is a little dry you can add a little cooking water. Plate on a flat plate and decorate with fresh parsley.
