Cut about 300 grams of the vegetables you prefer into very small cubes, avoiding soup vegetables such as potatoes, celery and beans. Brown with a little oil and salt for 10 minutes, stirring often, over medium-high heat. Set aside the vegetables, which must not be overcooked. In the same pot without washing it, put 150 g of risotto rice and cover with double the hot water, cook over medium heat for about 20 minutes, stirring often, if the rice dries out early add more water, but at the end do not add water because it must dry as much as possible. Let the rice cool, you can cook it hours before or use leftover rice from some risotto. When the rice is now cold or almost, add an egg, salt, parsley, the vegetables from before and 2 tablespoons of cheese, mix.
