Vegan, tastes sensational: Duxelles on celery in puff pastry. Duxelles is a farce made of superfinely chopped mushrooms that we put on thin slices of celery. The celery, previously blanched, is laid in strips on the puff pastry and then the whole thing is rolled and sealed in the oven. Serve with wild beurre blanc with olive oil instead of butter on filleted tomatoes that are pulled through the pan in a matter of seconds. That calls for Riesling.
