Ingredients: 300 g cabbage, 100 g spinach, 100 g borlotti beans, 1 white onion, 2 carrots, 2 celery stalks, 20 g tomato paste, 2 potatoes, 150 g fresh sheep's cheese, oil, salt and pepper; Fregula: 150 g semolina, 1 egg yolk, 30 g water, 1 sachet of saffron, salt Procedure: To prepare fregula at home, in a glass beat the egg yolk with the water and the powdered saffron. In a bowl, place the durum wheat semolina, then slowly add the egg yolk mixture, working the mixture with your hands, so as to create increasingly large crumbs: a sort of couscous. Let it dry at room temperature for a day. Let's move on to the minestrone. In a large pot, fry the chopped onion with a drizzle of oil. Add the carrots and celery cut into small cubes and let them flavor. Add the beans soaked overnight in cold water. Continue by adding the potatoes cut into small cubes, the sliced cabbage and the fresh spinach chopped with a knife. Add the tomato paste, a pinch of salt and cover everything with cold water. Let it cook gently for 30 minutes. At this point, dip the now dry fregula into the minestrone and let it boil for another 10 minutes. Serve the minestrone with fresh diced pecorino cheese.
