Welcome to Living Gluten Free, how are you? In today's video we are going to make this INCREDIBLE gluten-free Coconut and Dulce de Leche cake that you won't believe how delicious it is. Here are the ingredients: 🥥250 g gluten-free flour mix 🥥150 g butter 🥥250 g sugar (one part for the dough and another for the topping) 🥥4 eggs (2 for the dough, 2 for the topping) 🥥1 tbsp vanilla esc 🥥1 tbsp baking powder 🥥1 pinch xanthan gum 🥥400 g confectioner's dulce de leche 🥥200 g grated coconut 👉 Beat the butter with 100 g sugar, 2 eggs, and vanilla. Then add the gluten-free flour mix with the baking powder and xanthan gum. Move to the counter and make a smooth ball. Let it rest in the refrigerator covered with film and stretched. 👉 Butter and flour a pie pan and cover it with the dough and place it back in the refrigerator for a while to prevent the dough from breaking when adding the dulce de leche. 👉 Place the dulce de leche on the dough and then place the cover. 👉 For the cover, mix 150 gr of sugar, coconut and two eggs. 👉 Oven 180 degrees for approx. 30 minutes 👉 Let it cool. 👉 Remember that you can make it in cake format, in a rectangular mold and make squares, or in individual pie pans.
