Check out the step by step: INGREDIENTS Meringue: 250 grams of confectioner's sugar 4 egg whites ¼ teaspoon of cornstarch ¼ teaspoon of white wine vinegar ½ teaspoon of vanilla paste Strawberry jam: 200 grams of fresh strawberries 50 grams of demerara sugar 50 ml of Sicilian lemon juice Cream: 50ml of fresh cream 200 grams of mascarpone Zest of 1 Sicilian lemon 1 teaspoon of vanilla paste 1 tablespoon of brandy For assembly: ½ cup of fresh blackberries ½ cup of fresh raspberries ½ cup of fresh cherries ½ cup of fresh blueberries ½ cup of uvaia ½ cup of fresh currants Fresh basil leaves to taste PREPARATION Meringue Place the egg whites at room temperature in a mixer with the confectioner's sugar. Using a whisk, beat the egg whites and sugar on medium speed until combined, then add the vanilla, vinegar, and cornstarch. Continue beating until the mixture is firm, smooth, and shiny, for about 10 minutes. Place a disk or plate approximately 18 centimeters in diameter on a sheet of parchment paper and mark the circumference on the paper with a pencil. Place the marked parchment paper on a baking sheet and form the meringue in the shape of this disk. Bake at 90 degrees Celsius for about 1 hour to 1 hour and a half, or until dry on the outside. Remove from the oven and set aside. Strawberry jam In a small saucepan, place the fresh strawberries, lemon juice, and sugar. Mix and cook over medium to high heat with the pan partially covered for 15 minutes. Mash the strawberries with a potato masher and let cool. Set aside. Cream In a bowl, place the fresh cream, beat with a whisk until it reaches the consistency of soft whipped cream, add the mascarpone, the Sicilian lemon zest, the vanilla paste and the cognac. Beat a little more until it thickens. Set aside. Assembly Place a little cream in the center of the plate where you will assemble the pavlova and place the meringue disk in the center of the plate. Place a generous layer of cream on top of the meringue disk and spoonfuls of strawberry jelly. Distribute the fruit on top of the cream and jelly and finish with basil leaves.
