She is a native Hue person who cooks Bun Chan Gio differently from people from the South or the North. After cooking Gio Heo, the white meat is fragrant and not tough, not soft. The lean meat still retains its sweetness and is not dry. The soft tendons are very special with the clear Bun Soup mixed with the light red color of Chili Oil.
