We set out to find a dining table filled with all the savoriness in the world, sesame oil and perilla oil. ■ A Mother’s Unchanging Taste, a Perilla Oil Dining Table In Omi-ri, Gurye-gun, Jeollanam-do, there is the family of grandmother Hwang Soon-ok, 81 years old. Grandmother Hwang Soon-ok has spent her entire life with perilla oil. Her husband only looks for food with perilla oil, and her youngest son, Jo Hyeon-gyo, squeezes oil from perilla seeds that his mother grew herself at an oil factory. They are truly a perilla oil family. Grandmother Hwang Soon-ok prepares a delicious meal with her daughter-in-law using sesame oil grown by her son and salted by her son. Acorn jelly and sweet potato sprouts are mixed in the savory sesame oil, and sesame seed gangjeong is prepared by roasting sesame seeds. The sesame oil meal prepared with the sincerity of the elderly couple and their son and daughter-in-law feels even stronger. ■ Human nature more delicious than sesame oil, Gyeongju Angang Market Angang Market in Gyeongju, Gyeongsangbuk-do boasts a long tradition. Starting in the 1970s, oil mills began to appear one by one, and now there are about 40 sesame oil mills gathered inside and outside, making it the home of sesame oil. The regular customer on the tables of the people at Angang Market is, of course, sesame oil. Sesame oil goes perfectly with octopus and sea squirt, other specialties of Angang Market. Mr. Kim Jong-hee and his wife, who have been running a sesame oil mill in Angang Market for several decades, prepare a bountiful table with specialties from the market on market days. Lee Jeong-ae’s family goes out to sea on a boat. Her husband, who had been sailing with her for 40 years, passed away in an accident a year ago, and her son and daughter have been quietly filling her father’s place. Lee Jeong-ae works at the sea and also farms. When her husband was alive, she also farmed sesame seeds on a fairly large scale. They make soup with gobies caught from the sea and make side dishes by drying them. The fragrant smell of sesame oil wafting from the dining table has now become the smell of longing that reminds her of her father. ■ Sesame seeds are pouring down~ Perilla leaf couple’s table In Moksadong-myeon, Gokseong-gun, Jeollanam-do, the main producer of perilla leaves, perilla leaves are grown all year round. The table of Jaeho Yoo and Yeongae Jo, who grow perilla leaves in Daegok-ri, is always filled with the fragrant scent of perilla leaves. Perilla leaf kimchi, seasoned with a generous amount of perilla oil, is Yeongae Jo’s favorite side dish. She mixes cooking oil and perilla oil, coats a pan, and frys perilla leaf pancakes. She grinds perilla leaves in water and puts the perilla stock in stir-fried bracken or makes perilla and toran soup with them. Yeongae Jo and her husband, who got married off and became two again, have become even more affectionate towards each other as they have grown to rely on each other for many years.
