It is good for chopping things up. And the serrated knife is also very versatile. For example, it is suitable if you don't have any sharp knives and need to chop up a soft tomato. Other useful knives in the kitchen are bread knives, tourniquet knives, cheese knives and knives for preparing meat. HOW MUCH SHOULD A GOOD KNIFE COST? Opinions differ when it comes to price: "If you ask me as a chef, then of course I look at quality and, above all, durability. Can I get by with a knife for the rest of my life? Then I just have to assume that it starts at around 120 euros and there is no upper limit. It can also go up to 300, 400, 500 or 700 euros," says professional chef Andreas Miessmer. In our practical test, however, the mid-priced knife is the winner HOW TO MAKE BLUNT KNIVES SHARP AGAIN The general rule is: When buying a knife, you should always pay attention to the so-called HRC value. Some manufacturers specify this. It represents the hardness of the blade. The minimum requirement is 52 HRC. High-quality knives have an HRC of over 55. Our practical test shows: the higher the price, the harder the blade. In fact, however, almost all knives can be sharpened well. This is sustainable and cheaper than buying new. CHECKING CUTTING BOARDS The cutting boards also matter: wood, plastic, stone or glass? Which material is best for which food? And the plastic boards? How hygienic are they compared to wood? Do germs collect on them? We send various cutting boards to the laboratory to find out whether bacteria actually accumulate. The result: The plastic boards had a significantly higher bacterial load than the wooden boards. “With plastic boards, you have to be extremely careful to clean them well. […] With the wooden boards we are definitely on the safe side from a hygiene point of view because wood contains tannins which have an antibacterial effect.” Our tip: To make wooden boards last longer, rub them with walnut or linseed oil twice a year. This takes care of the surface. CONCLUSION No matter how much money you end up spending on a knife, it is important to look after the knife properly. This means grinding and sharpening it regularly. The sharper the knife, the safer it is, because the less likely you are to slip. The shape and material of the handle are primarily a matter of taste. It is therefore best to test the knife before you buy it. Because with the right knife, it is much more fun in the kitchen.
