Healthy, unlike industrialized dried meat, it does not use preservatives, acidifiers, dyes, nitrites and nitrates in the preparation, which can be harmful to your health. How to make: 2.5 kg of hard mattress; 2.5 kg of breast tips, 4 kg of refined salt. You can use whatever weight you want as long as you use enough salt to cover all the meat. Salt all the meat with enough salt to cover all parts and cuts, use a glass or plastic container when salting. Cover with a lid or plastic wrap and let it rest outside the refrigerator for 2 days. After 2 days, change the salt, without washing the meat and let it rest for another two days. After the time, change the salt again and rest for another 2 days. In total there are 6 days of curing and then take it to sunbathe with a hook or culinary string for 1 or 2 days. In the recipe, I left it in the sun for 2 days. Once ready, you can wrap it in fabric or tulle and leave it hanging. You can put it in a mesh cage or wrap it in plastic film, refrigerate it or freeze it. Conservation: -if left hanging it can last for 3 months; -if you leave it packaged in the refrigerator it can last up to 6 months and -if you freeze it it can last up to 1 year.
