Today at bbq joint I'll explain how to cook picanha, a cut of beef made famous by Brazilian grillers thanks to churrasco, but which has now become common here in Italy too. The Italian name is beef tail, located in the rear part of the bovine. The peculiarity of this cut is the cover of fat located on the upper part, a fat that melts and makes our preparation even tastier. Brazilians usually cut it into 3/4 slices and skewer it on a sword and cook it rotisserie style, today we will not obtain steaks but we will cook the whole picanha with a technique called Flash Roasting. In the first phase we will smoke at medium-low temperatures (130-140 degrees) while, in the second phase, we will increase the cooking temperature and roast at 180-190 degrees brushing from time to time with flavored butter. For this preparation we will use the Gateway Drum Smoker, an ideal smoker for Hot & Fast cooking. Here are the steps to cook the Picanha in Flash Roasting: Trimming - I remove the excess fat and cut the upper fat creating a chessboard Rub on the entire surface of the lean part of the picanha Cooking at 130-140 with cherry smoking Once 40 degrees internally is reached, I raise the temperature of the bbq and brush with the flavored butter Once 55-57 degrees internally is reached, I let the meat rest for about ten minutes Cutting and tasting Mediterranean rub: 20 g of fine salt 13 g of brown sugar 10 g of black pepper 8 g of rosemary 5 g of thyme 3 g of onion powder 3 g of garlic powder Flavored butter: 50 g of ointment butter A teaspoon of Mediterranean rub Fresh herbs chopped with a knife (rosemary, thyme, mint, basil) IF YOU LIKED THE VIDEO: ????????
