SPELT BREAD WITH GRAIN 200 g spelt flour, 100 g rye flour, 100 g wheat flour, 8 g salt, 30 g sunflower seeds, 30 g pumpkin seeds, 30 g rapeseed oil, 130 g sourdough, 200 g water (45 degrees Celsius), seeds for sprinkling, WHEAT BREAD WITH SESAME 350 g wheat flour, 50 g rye flour, 8 g salt, 30 g oil, 130 g sourdough, 200 g water (45 degrees Celsius), C), sesame seeds for sprinkling, WHOLEMEAL BREAD 200 g wholemeal flour, 100 g rye flour, 100 g wheat flour, 8 g salt, 30 g oil, 130 g sourdough, 200 g water (45 °C). PAN DIMENSIONS: base 8.5cm x 22cm, top 10cm x 25 cm. BAKING METHOD: after the bread has risen, turn on the oven to 250 degrees, fan mode. Bake for 15 - 18 minutes. Spray water over the bread in the oven, bake for another 5 minutes at 250 degrees. After five minutes, reduce the temperature to 200 degrees. From that point, bake for 10 minutes and spray again, bake for 5 minutes again. Remove. If there is no convection, each baking stage before spraying should be extended by 3 to 5 minutes. NOTE (23-10-2018): I have slightly modified the preparation of the dough. I no longer perform the initial start-up, but after taking the sourdough out of the fridge I prepare the bread as in the film, but I pour water at 55 degrees into the flour. I leave the dough to rise for 10 hours and it is OK. This way you can prepare the dough, for example, late in the evening and bake it in the morning :)
