Recipe for Potato Chips There's something very special about Christmas – roast pork, red cabbage and, of course, gravy. But what do you do when gravy is just sitting there and needs a partner? Potato chips with gravy, of course! Think of it as the potatoes' Christmas lunch costume – crispy, golden and ready to dip into the best gravy of the year. This recipe isn't just for the chip lover – it's for you who believe that the potato is Denmark's true Christmas hero. We've taken the humble potato and sent it on a spa break in ice water before giving it a spin in the deep fryer that makes it crispy enough to keep the whole Christmas party entertained. When you take a bite, you'll hear the angels singing – or maybe just Uncle Jens shouting for more gravy. So why settle for boiled potatoes when you can impress your family with something that's both crispy and perfect for scooping up the delicious gravy? Try it and you'll never look at a potato the same way again. Potato chips for the Christmas table – because even potatoes deserve a little festivity at Christmas! ???????? Ingredients: 1 kg medium-sized Danish eating potatoes 2 liters of boiling water 1 tablespoon of fine salt Plenty of neutral oil for frying (e.g. sunflower or rapeseed oil) Extra salt for seasoning Method: Peel the potatoes if you wish, or keep the peel for a rustic style. Cut the potatoes into very thin slices (approx. 2 mm) with a mandolin or a sharp knife. Bring the 2 liters of water to the boil in a large pot and add 1 tablespoon of fine salt. Put the potato slices in the boiling water and blanch them for 2 minutes. Pour the potato slices into a colander and immediately transfer them to a bowl of ice water. Let them cool completely in the ice water (approx. 5 minutes). Remove the potato slices from the ice water and pat them dry with a clean tea towel or kitchen roll. Make sure they are completely dry before frying. Heat the oil to 180°C in a pan or deep fryer. Fry the potato slices in small batches so that they do not stick together. Fry them for 2-4 minutes, until they are crispy and light golden. Remove them with a slotted spoon and let them drain on a plate with kitchen roll. Sprinkle the chips with a little extra salt or your favorite spice mix while they are still hot. Serve immediately, or store them in an airtight container when they are completely cooled.
