Mix the flour and salt in a bowl. Slowly stir in the yeast water until the dough holds together well. Cover the bowl and leave to rise in a warm place for around 2 hours; the volume should roughly double. Generously flour the work surface and turn the dough out of the bowl. It should be very soft, almost “liquid”; this is what you want, as it will make the bread light and moist later. Generously flour the dough and briefly weigh it in the flour (do not knead, otherwise the bread will not be light enough and will become hard), twist the dough into a root bread with your hands and lift it onto a baking tray lined with baking paper. Bake in a preheated oven at 220°C top/bottom heat for around 30 to 35 minutes until golden brown. Add a heat-resistant bowl of water to make the crust crispy. Have fun baking!
