Same for the asparagus. Drain, let cool. Cut the potatoes into pieces, you can leave the asparagus whole or cut them as well. Pour everything into a salad bowl, add green olives, black olives, a chopped red onion, hard-boiled eggs, salt, pepper, vinegar, olive oil. Mix everything together and serve. ???? SWEET POTATO FETA WALNUT PIE DOUGH Mix 95g of very soft or almost melted butter with 200g of flour + a little salt. Add a dash of water to form a ball. Roll out and place in the pie dish FILLING Cut three sweet potatoes lengthwise, make cuts with the tip of a knife, place in an ovenproof dish, cover with a drizzle of olive oil, and bake at 200° until the flesh is very tender. Scrape the flesh from the potatoes, and mash it with a fork in a small salad bowl. In another container, beat three eggs with 10cl of cream, salt, pepper and mix with the mashed sweet potatoes. Pour over the pie crust, crumble the feta and a few crushed walnuts on top. Bake at 200° for 30 to 40 minutes. Check the cooking as this can vary depending on the oven. ???? THERMOMIX STRAWBERRY SORBET 70 grams of caster sugar 500 grams of frozen strawberries 1 tablespoon of lemon juice 1 egg white Put 70 grams of caster sugar in the Thermomix. Pulverize 10 sec / speed 10. Then scrape the sides of the bowl with the spatula. Add 500 grams of frozen strawberries, 1 egg white and 1 tablespoon of lemon juice (adjust according to taste) in the Thermomix. Mix 1 min / speed 8 using the Thermomix spatula. Add the whisk. Mix 45 sec / speed 3 then remove the whisk. ???? STRAWBERRY SPECULOOS TIRAMISU Ingredients: 2 eggs, preferably organic 35 g caster sugar 250 g mascarpone Strawberries, washed and cut into pieces Speculoos, quantity according to taste A bowl of apple juice or milk, orange juice.. Soak the speculoos in the liquid, and place them in a gratin or cake dish. Add the strawberry pieces on top. Separate the whites from the yolks in two different bowls. Beat the yolks with the caster sugar until the mixture increases in volume and whitens. Add the mascarpone, mix. Beat the egg whites in the second bowl. Gently incorporate the whites into the preparation containing the mascarpone. Pour everything into the dish, on the speculoos. For decoration, crumble pieces of Speculoos on top and add pieces of strawberries. Crumble a few speculoos on top of the tiramisu. Cover the dish with cling film or aluminum foil.
