Lentils with curry Recipe: In a pan I add some extra virgin olive oil, fry an onion and a carrot for 3 minutes, immediately add a little salt, also add a crushed garlic clove and half a pepper (optional), after another 3 minutes I add the spices so salt, pepper and curry to taste, mix and add a 400ml can of coconut milk, about a glass of tomato puree, a glass of broth or water and half a stock cube and then add 300g of red lentils. Mix and cook for about 20 minutes. Now you just have to mix every now and then. Add more broth or water if necessary and adjust the salt and curry, add some lemon juice (a quarter). The lentils are ready.
