Hollandaise sauce is an absolute classic and a typical basic sauce for asparagus, meat and of course the popular breakfast, eggs Benedict. In this video you will learn everything you need to know! I will not only show you how to make it every time and what is important, but I will also tell you the tricks so that you can see that poaching eggs is not as difficult as you think. Here is the recipe: 4 eggs 1 handful of spinach 2 brioche buns 4 slices of smoked salmon 2 slices of tomato (Egg Royal or Hemmingway spinach + salmon or Egg Blackstone bacon + tomato) Hollandaise: White wine reduction 100 ml water 100 ml white wine ½ shallot 2-3 cloves (optional) 3-4 juniper berries (optional) 1 bay leaf Hollandaise 2 egg yolks 120 g melted butter 2 tbsp white wine reduction 1 pinch of sugar 2 pinches of salt 3-4 drops of Worcestershire sauce Juice of ¼ lemon, white pepper Instructions: Mix all the ingredients for the white wine reduction together in a saucepan and reduce by half over medium heat. Strain and set aside. Put the butter in a metal bowl and melt it on the still hot white wine reduction. Put a small pan with a little water (approx. 200 ml) on the stove and let it simmer gently. Meanwhile, put 2 egg yolks in a metal bowl, add 2 tablespoons of reduction and mix with a whisk. Now put the bowl over the pan and stir the egg mixture with even movements of your wrist until it becomes lighter, creamier and fluffier. Take the hollandaise from the water bath every now and then and check that the water in the pan is not boiling. The sauce is ready when the whisk leaves deep gaps when it glides through. It is best to place your bowls on a towel or a non-slip surface. Now stir the sauce while adding your melted butter, first drop by drop and then gradually in a thin stream.
