Carlotta prepares a couscous with winter vegetables and spicy sauce. Ingredients: 360 g couscous, half an orange cauliflower, half a green cauliflower, half a purple cauliflower, 240 g cooked chickpeas, 1 tablespoon tahini, 1 tablespoon maple syrup, 1 tablespoon apple cider vinegar, chili powder, paprika, extra virgin olive oil, salt Procedure: Divide the cauliflower into small florets, arrange them on a baking tray with baking paper and season with a drizzle of oil and salt. Cook in a hot, static oven at 220° for 20-25 minutes. We prepare the couscous, following the instructions on the box: usually, we put it in a bowl, cover it with boiling water (or broth), cover it and let it rest for 8-10 minutes. After resting, we fluff it with a fork. We prepare the spicy sauce: in a bowl, we mix the tahini (sesame sauce) with the apple cider vinegar, a pinch of chili powder and paprika, a tablespoon of vinegar syrup, oil and salt and mix until we obtain a smooth mixture. We season the couscous with a drizzle of oil and add the cauliflower cooked in the oven and the pre-cooked chickpeas. We mix everything and serve with the spicy sauce on the side, or on top.
