Add the wheat flour, rye flour, salt, baking malt and balsamic vinegar, knead for 3 mins/dough setting and leave to rise for 30 minutes until the dough has doubled in size. At the end of this time, preheat the oven to 220°C/U and line a baking tray with baking paper. Knead the dough again for 1 minute / dough setting, shape it into a loaf of bread on a floured work surface with floured hands, place it on the prepared baking tray and leave to rise for another 15 minutes.
