CLOSED MEAT SHOP YIELD: 30-35 SMALL UNITS 500G OF WHEAT FLOUR 250ML OF WARM WATER 50ML OF VEGETABLE OIL 5G OF SUGAR 10G OF PURE SALT 3G OF DRY ORGANIC YEAST Preparation method: 1) Combine the yeast and sugar in a bowl with some warm water. Let it rest while you prepare the rest of the dough 2) Add the remaining dry ingredients to the flour and place in the mixer 3) Add the oil 4) Start mixing at low speed and add the rest of the water little by little, increasing the speed to medium 5 ) Sprinkle the wheat flour on a work surface to finish kneading 6) Cover the dough with a cloth and let the dough rest for approx. 30 minutes 7) Make small balls of approx. 30g each and let rest again 8) Roll out the dough with a rolling pin and place the meat filling in the middle 9) Bring the ends together in the center and place the sfihas on a non-stick baking tray 10) Preheat the oven to 250 degrees 11) Remove when they are slightly golden. It was founded in 1954 by Syrian immigrants who professed the orthodox apostolic Catholic religion , however, its presence goes beyond the limits of religion, constituting since the 1950s a traditional meeting place for Arab culture in Curitiba. ABOUT THE PROJECT The project consisted of carrying out research on the history of the Catholic Apostolic Orthodox Antiochian Church of Saint George, known as the Church of the Arabs, and also culinary workshops on traditional Arabic recipes. It resulted in the publication of the book IGREJA ORTHODOXA SÃO JORGE: ENCONTRO DOS ARABES EM CURITIBA, which provides an overview of Arab immigration, understanding the formation and demands of the immigrant community in our city, the context in which the Antiochian Orthodox Catholic Church of São Jorge de Curitiba emerged. Organized by nutritionist and historian Juliana Cristina Reinhardt, who is the author of the first chapters, it also features a chapter by Gustavo Pitz, “The Beginning of Arab-Christian Immigration to Curitiba (1890-1930)” and also by Gabriel Brum “Consolidation of the community Christian Arabic in Curitiba (1930-1965) where, in addition to exposing the immigration situation in that period, we are introduced to some members of the Orthodox community through their business houses. Closing the book, a special chapter shows the importance of food as a link that maintains memory, tradition and identity, through traditional recipes authored by Vaneska Berçani, from the Velho Oriente e Mesmiz restaurant. Other cultural products made were videos that teach how to make various Arabic culinary recipes and also a video presenting the results of research with the book's organizer and project proponent.
