Nutrichef Gaby Esteves prepares a delicious chicken fillet with a creamy spinach sauce and beetroot chips in our kitchen! FOR THE CHICKEN FILLET WITH CREAMY SPINACH SAUCE: • 500g boneless breast fillet • 1 tablespoon of homemade seasoning (blend 1 onion + 2 cloves of garlic + 1 stalk of leek/parsley + salt and black pepper to taste and a little olive oil for blending) • 1 large bunch of spinach (leaves only), sanitized • 1 teaspoon of olive oil • 2 chopped garlic cloves • Salt and pepper - - kingdom to taste • 200ml of cottage light (beaten with a mixer until it becomes a smooth cream) • 50g of grated parmesan • Parsley to taste to finish PREPARATION METHOD: In a frying pan, grill the chicken fillets (which were already seasoned and marinating for about 1 hour) until golden. Remove from the frying pan and set aside. In the same frying pan, add the olive oil and brown the garlic. Add the spinach and let it wilt. Add the cottage cheese, season with salt and black pepper and add the chicken. Let it boil and then serve. Sprinkle the Parmesan cheese and parsley. FOR THE BEET CHIPS: • 1 beet, very thinly sliced ​​• Salt to taste PREPARATION METHOD: Choose firm beets. If they are soft, it means they are already old and you won't be able to slice them on the mandolin. For unpeeled (organic) beets, wash the peel well with a brush and detergent and rinse under running water. Cut beetroot into thin slices using a mandolin or sharp knife. If you don't have a mandolin, try to make slices of the same thickness, so they cook evenly in the microwave. Salt the beets before they are microwaved, as the salt will not stick to them once they are ready. On a large plate or on the microwave plate itself, place two sheets of paper towel underneath, place the beets without overlapping them and cover with two more sheets of paper towel. Program your microwave at maximum power and set for two minutes. After this time, turn the beets over and pause the microwave every 30 seconds and check their texture until they are very crispy. Serve immediately and consume immediately. 💡 TIP: Cooking time will depend on the power of your microwave. If it is weaker, it will take longer on each side.
