A high plateau in the middle of the sky straddling 3 departments, Aveyron, Cantal and Lozère. A seemingly limitless space whose almost desert-like appearance is deceptive because Aubrac has never ceased to be a land of passages, encounters and life. We begin our escapades with Gonzalo Diaz, a guide for 30 years. A waterfall, a lake, a forest, we discover with him the volcanic history of this plateau. But it is men who have designed these landscapes, particularly with agropastoralism. During a meeting with Francis Vialard, a breeder, we discover the queen of this territory, the splendid Aubrac cow. Then we leave for the Buron de Camejane, the last active buron to produce summer cheese on site. Jean Claude Ramon and his sons introduce us to the secrets of an aligot cooked in the old-fashioned way. At the Dômerie d'Aubrac, created in the Middle Ages to welcome pilgrims on the paths of Saint Jacques, Gonzalo tells us about the role that this pilgrimage played, and still plays, in the development of this territory. We end up in Laguiole to talk with Christian Lemasson, journalist and writer, about the history of the famous knife. A knife that almost disappeared but which today has become the best-selling regional knife in the world.
