It has been circulating in Monnickendam for months: Slagerij de Wolf will close its doors in January 2025 after 100 years of presence in the Havenstraat. The shop is closed on Mondays and Tuesdays, but that does not mean that you can rest. The meat arrives in large pieces and is boned by René. Sausages are rolled and wrapped in pig intestines. You can see that René is very experienced with all the tasks he performs in his shop. He has been working in the butcher's shop that was started by his grandfather since he was 15. His father then took over. He took over the business in 2005. René is still crazy about his profession and he knew from an early age that he wanted to work in the butcher's trade. He talks a mile a minute and we could fill hours of film material. With 30 years of experience in the business, a butcher's training and a talent for cooking, Lisette is a real jack-of-all-trades. She prepares the most delicious soups and meals that are eagerly bought by many. Now that the closure is looming, some customers ask for her recipes. She keeps them to herself because she does not know how her working life will go. According to a customer who spoke to Lisette at a party, Slagerij de Wolf has the best smoked beef in the entire country. They just put that in their pockets.
