As promised, here is the recipe for the rouleau so that you can make it yourself for Christmas dinner. This dish is easy to prepare, so not much work during dinner. Just before Christmas dinner, cut the rouleau into slices of the desired thickness, carefully remove the plastic from the outside and heat it in an oven at 130 degrees or fry it gently in the pan. Serve with cubes of fried black pudding, sprout leaves, Jerusalem artichoke and make a nice jus from the pheasant carcass and possibly mount it with some duck liver for a super deluxe Christmas dish! Serve with a nice Burgundy, I chose the Pouilly-Fuissé “Ax-B” from Domiane de la Chapelle, the minerality and nutty flavour harmonise perfectly with the pheasant, duck liver, Jerusalem artichoke and porcini mushrooms!
