It takes about 15 minutes. Do not leave more, if the yeast is over-fermented, the dough will not rise well. Pour yeast into a bowl, add flour, the rest of the sugar (90 g), whole eggs, warmed butter, rum, lemon zest and salt and mix to a smooth dough. If it is too sticky, dust it with plain flour. Cover the dough in the bowl with a clean towel and let it rise for an hour. Knead with your hands halfway through the time. Prepare the filling. Mix the curds with sugar, egg and yolk. Egg white is deliberately added there to make the filling soft and not too stiff. Brush the baking sheet with butter. Preheat the oven to 180 degrees. Divide the risen dough into 12 pieces. Always make balls that you press with your fingers into a square-shaped pancake. Put a spoonful of the curd mixture on top of it, bring the corners together, press well and roll them inwards in the middle. Place the folded part on the baking sheet. Then spread butter on all sides of each bun. You don't need to rub from the bottom. Cover the prepared buns with a towel and let them rise for another 15 minutes. Place in the oven and bake for 35 minutes until golden brown. After removing from the oven, brush the buns with butter mixed with a teaspoon of rum. It makes the buns smell nice. Leave to cool and then sugar with powdered sugar.
